If you're an adult female, but your skate size is marked under "Junior" instead of senior (she's 23), does that make a difference in the skate?
Or just the size?

The only difference will be the size. The junior size skate will have the same features and performance as a senior size.

As the Bauer Vapor skate line models move up the skate quality increases overall . The skates get lighter, the padding and linings are more comfortable and protective and the foot bed quality increases.
