Bake them first like any other modern skate.

You do not have to bake them prior to first use. However, it is always a recommendation to do so.

As you know, different Graf skate models have a wide variety of fits. The Graf G75 has a bit more of a pronounced heel fit than the Graf G7s. The heel instep depth on the G7s are a tad deeper than the G75s. I have attached a great link provided by Graf describing all of the models that Graf offer including the two models you had questions on.

Your best bet is to take the skates to pro shop that has a skate oven. If you don't have that option then you can do it at home yourself. Place one skate on a baking sheet in the oven at 165 degrees. Only keep the skate in the oven for 6-8 minutes max so it doesn't affect the integrity of the skate. Put the skate on and lace it up slowly to keep from damaging the eyelets. It's OK to stand up but refrain from walking around in the skate. Keep the skate on for 15 minutes, remove it, lace it back up and tie it. Repeat this step with the other skate.

Yes different brands of holders will work on a Graf skate. Sometimes, depending on the brand, a few new rivet holes may have to be drilled but it will not affect the integrity of the skate.

Your best bet would be to get your foot into a Graf Supra 709 skate. The narrower heel fit and deep fitting design is comparable to the G70.
