Real tough call as you are in the same boat as many being inbetween sizes. I have simialr issues in the shoulder pad department and feel that a large fits fine. XL in Reebok does tend to run a bit big, therefore adding to some bulk and not secure tight on the upper body. The large should be the way to go providing great protection without sacrificing your mobility.

Question
Sizing Chart? (M vs L)
I am 5'11 and 180lbs and I play in a mens league where I've not worn shoulder pads in years, but after a recent AC joint & rotator cuff injury I am looking for something with minimal but solid protection - do these fit on the large side or should I stick with a medium? (I wear medium t-shirts) The fit based upon height is what I'm concerned with...

These RBK shoulders do run a little large. I would highly recommend you give the mediums a go. They will fit more securely and protect your rotator but will not hinder movement.

With those specs I would recommend a Medium for you. The larges will not fit securely on your frame on will be to bulky for what you need.

Question
Will this help against repeated shoulder injuries?
My nephew keeps getting shoulder injuries. He is in high school in the USA. Are these legal for his level of play? Would this help, in your opinion, him not to get injured shoulders as often?

They will not prevent injuries but the shoulders are extremely protective and we have heard great feedback. They are light weight and mobile so it will not hinder movement on the ice.
